Beautiful weather today and then it started raining late afternoon. My study group was cancelled and I was stuck at home to do my accounting project. It was cold and I was craving for something hot and little spicy. When I did the grocery over the weekend, I was tempted by a Singapore Laksa instant noodle soup. I haven't had instant noodles or pancit canton in over a year and a half due a cancer survivor story that scared me. Anyway, story short, I broke my year long "NO INSTANT NOODLE" phase over a hot Laksa soup this cold Sunday night. I found a way to make a yummy soup using a different method :) Longer but worth it.
Steps
- Boil the noodles in a pot with water then drain after cooked to remove the water with the wax.
- Boil another pot of water and put the noodles into hot boiling water and then turn the heat off.
- Only at this stage when the heat is off, and while the water is very hot, put the ingredients with the powder into the water, to make noodle soup.
- Then if you want, you can put pepper, onion, some vegetables and maybe an egg to make your meal healthier and more delicious.
I added shredded chicken (left over from my quarter chicken from the deli), knorr powder, an egg and pepper. Oooh, and a little olive oil.
